Charlie’s Pritchon™ is fried lechon or "Pritong Biik" wrapped in pita wedges and served with seven kinds of sauce. It is a very creative way of serving a whole suckling pig or "Lechon de Leche". It is a Philippine delicacy that has always found its place on the premier tables during special occasions and festive events but given a different twist.
The product is named after its innovator, Charlie Esguerra. Together with his wife, Dina Mayuga, they have transformed the traditional lechon dish into an even finer cuisine that would cater to various discriminating and creative taste palettes.
It all started while they were both stuck in traffic along EDSA. Charlie suddenly thought of frying the pig instead of roasting it. After two weeks, Dina dreamt of her mother who passed away in 1996. Dina’s mother told her to wrap the fried lechon in pita wedges and use several sauces other than the traditional lechon sauce. With the help of other family members and friends, they were able to develop the product. In 2002, they organized the Pritchon™ Corporation and started delivering commercially using the Pritchon™ Service Concept. This service concept presently being practiced, is highly appreciated by the Filipino consumer market. A service crew normally goes to the party place with the Pritchon™ packaged in a hand-woven pandan leaf mat, carved and wrapped in pita wedges right in front of the guests. The service is personalized as the friendly service crew is given the chance to converse with the guests.
Charlie’s Pritchon™ is made without shortcuts or compromises. This Pritchon™ is seasoned and prepared with product quality and service foremost in the minds of its owners. It is especially prepared and deep fried in cooking oil. This succulent dish is served in a way similar to another traditional delicacy, the "peking duck". The creativity continues as the Pritchon™ is expertly carved, mixed with spring onions and cucumber, and wrapped in plain, herb, spinach and tomato pita wedges. It is given a more distinct and colorful flavor when it is dipped into any one or combination of their seven especially concocted sauces, namely: hoisin, honey mustard, white garlic, chili tagalog, sate, honey lemon and liver (traditional lechon sauce). Wrapping the tender meat in pita wedges and dipping into the sauces makes the whole experience lively and entertaining for all the guests. Recently, three more products were added to the Pritchon™ line - the Pritchopabo™, Pritchon Salad™ and the Veggie Wraps. The Pritchopabo is fried turkey also wrapped in pita wedges with four sauces, namely : Cranberry, Curry, Mexican Salsa and Mushroom Gravy. The Pritchon Salad™ is a mixture of assorted lettuce with trimmings of Pritchon™ meat strips, crabsticks and mandarin oranges. The unique salad dressing also adds excitement to the dish. For the vegetable lovers, we have prepared the Veggie Wraps which is a mixture of fruits, vegetables and nuts wrapped in pita wedges of your choice - spinach, tomato or herb pita. This dish is hard to resist especially when dipped in balsamic or hoisin sauce.
